Rice with vegetables

Rice with vegetables is a very healthy and tasty dish, which you can eat one day before you go running or before another endurance training. Below I will show you how to prepare it.

Ingredients (4-6 pers.):

  • 350 gram rice

  • salt

  • one zucchini

  • 2 red pepper

  • one tomato

  • 1/2 onion

  • virgin olive oil (if not available another oil)

 

Preparation:

The preparation is very simple. Firstly, you roast all the vegetables with a little bit of salt gently in the oil for ca. 5-9 minutes, depending on how you like them. Then you cook the rice until it’s ready. After that you just put both together mix them with a little bit of salt and your meal is finished.
